A couple of days ago I did some Christmas polls on my story, one of which was about fruitcake. The results from the poll showed a pretty even split between loving and hating fruitcake. So for the half of you who hate fruitcake, I’m sorry but I love it!

My grandmother has THE BEST fruitcake recipe. I made 3 fruitcake loaves and within 24 hours of baking them, my family had eaten 1 loaf. The other two I am saving in the fridge to let the flavours develop with the brandy I poured over it (+ I’m meant to add brandy to the fruitcake every 2 weeks). Fruitcake lasts 1 year in the fridge, I highly doubt that it will last that long, but I’m devoted to making the loaves last longer than a few days!

Also, I should probably mention that I made this recipe subbing in bobsredmill 1-1 gluten-free baking flour in place of all-purpose flour, and it still worked out fine! My two brothers both cannot have gluten, and consistently bobsredmill 1-1 gluten-free baking flour is the best substitute.
